Ingredients
- 200g bittersweet chocolate (at least 60% cocoa)
- 300ml heavy cream
- 100g toasted hazelnuts (chopped)
- 4 egg yolks
- 75g granulated sugar
Instructions
- Melt the chopped chocolate in a heatproof bowl over simmering water until smooth.
- In a separate bowl, whip the heavy cream until soft peaks form.
- Whisk egg yolks with granulated sugar until pale and thick.
- Fold the melted chocolate into the egg mixture, then gently incorporate half of the whipped cream.
- Add remaining whipped cream and chopped hazelnuts, folding until no streaks remain.
- Spoon into serving dishes and chill for at least 2 hours before serving.
