- 2 lbs Yukon Gold potatoes
- 1 cup mayonnaise
- 3 tbsp yellow mustard
- 2 tbsp hot sauce (adjust to taste)
- 1 cup diced bell peppers (mixed colors)
- 1/2 cup diced red onion
- 1 cup diced celery
Instructions
- Boil peeled and cubed potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool completely.
- In a bowl, whisk together mayonnaise, mustard, and hot sauce until smooth.
- Dice bell peppers, red onion, and celery; combine with cooled potatoes in a large mixing bowl.
- Pour dressing over the potato mixture and gently fold until well-coated.
- Cover and chill in the refrigerator for at least one hour before serving.
