- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, cold and cubed
- ¼ cup granulated sugar
- ¼ tsp salt
- 2–3 tbsp cold water
- 2 cups fresh strawberries, hulled and halved
- 1 cup fresh blueberries
- 2 cups fresh peaches, sliced
- ½ cup granulated sugar (adjust to taste)
- 3 tbsp cornstarch
- 1 tbsp lemon juice
Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, mix flour, sugar, and salt. Cut in cold butter until it resembles coarse crumbs. Gradually add cold water until the dough forms. Roll out and fit into a pie dish.
- In another bowl, combine fruits with sugar, cornstarch, and lemon juice. Let sit while preparing the crust.
- Pour the fruit mixture into the prepared crust. Optionally add a lattice top or cover with another layer of crust.
- Bake for 35-40 minutes until golden brown; cover edges with foil if they brown too quickly.
- Cool for at least an hour before serving.
