  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • ¼ cup granulated sugar
  • ¼ tsp salt
  • 23 tbsp cold water
  • 2 cups fresh strawberries, hulled and halved
  • 1 cup fresh blueberries
  • 2 cups fresh peaches, sliced
  • ½ cup granulated sugar (adjust to taste)
  • 3 tbsp cornstarch
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix flour, sugar, and salt. Cut in cold butter until it resembles coarse crumbs. Gradually add cold water until the dough forms. Roll out and fit into a pie dish.
  3. In another bowl, combine fruits with sugar, cornstarch, and lemon juice. Let sit while preparing the crust.
  4. Pour the fruit mixture into the prepared crust. Optionally add a lattice top or cover with another layer of crust.
  5. Bake for 35-40 minutes until golden brown; cover edges with foil if they brown too quickly.
  6. Cool for at least an hour before serving.
