Instructions
- Preheat the oven to 350°F (175°C). In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, beat softened butter and sugar until fluffy. Add eggs one at a time along with vanilla extract; mix well.
- Gradually add the dry ingredients to the wet mixture until combined. Scoop rounded tablespoons onto lined baking sheets, spacing them 2 inches apart.
- Bake for 10-12 minutes until edges are golden but centers remain soft. Cool completely.
- Whip heavy cream until stiff peaks form and fold into chilled pastry cream.
- Spread or pipe pastry cream onto half of the cookies and sandwich with the remaining cookies.
- Melt chocolate chips over low heat; drizzle over assembled cookies before serving.
