Ingredients

  • All-purpose flour
  • Baking powder
  • Salt
  • Unsalted butter
  • Granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, whisk together flour, baking powder, and salt.
  2. In a separate bowl, beat softened butter and sugar until fluffy. Add eggs one at a time along with vanilla extract; mix well.
  3. Gradually add the dry ingredients to the wet mixture until combined. Scoop rounded tablespoons onto lined baking sheets, spacing them 2 inches apart.
  4. Bake for 10-12 minutes until edges are golden but centers remain soft. Cool completely.
  5. Whip heavy cream until stiff peaks form and fold into chilled pastry cream.
  6. Spread or pipe pastry cream onto half of the cookies and sandwich with the remaining cookies.
  7. Melt chocolate chips over low heat; drizzle over assembled cookies before serving.
