- 3 lbs beef brisket
- 2 tbsp BBQ rub (blend of brown sugar, paprika, garlic powder, salt, and pepper)
- 4 large sandwich rolls
- 1 cup dill pickles
- 1 cup BBQ sauce
Instructions
- Trim excess fat from the brisket, leaving a quarter-inch layer for moisture.
- Rub the brisket generously with the BBQ rub on all sides. Wrap in plastic wrap and refrigerate for at least one hour or overnight.
- Preheat smoker to 225°F (107°C) and add wood chips for flavor.
- Smoke the brisket fat-side up until it reaches an internal temperature of 195°F (90°C), approximately 6-8 hours.
- Allow the brisket to rest wrapped in foil for at least one hour to let juices redistribute.
- Slice thinly against the grain and assemble on sandwich rolls with pickles and BBQ sauce.
