  • 1/2 cup granulated sugar

  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • Zest of 1 lemon
  • 1/4 cup fresh lemon juice
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a mixing bowl, combine flour, sugar, and salt; add softened butter and mix until crumbly.
  3. Press half of the mixture into the bottom of the prepared pan.
  4. In another bowl, whisk together egg, lemon zest, lemon juice, and baking powder until combined; pour over the crust.
  5. Sprinkle remaining crumb mixture on top and bake for about 25 minutes or until golden brown.
