Ingredients
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 large egg
- Zest of 1 lemon
- 1/4 cup fresh lemon juice
- 1/2 teaspoon baking powder
- Powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C) and grease an 8×8-inch baking pan.
- In a mixing bowl, combine flour, sugar, and salt; add softened butter and mix until crumbly.
- Press half of the mixture into the bottom of the prepared pan.
- In another bowl, whisk together egg, lemon zest, lemon juice, and baking powder until combined; pour over the crust.
- Sprinkle remaining crumb mixture on top and bake for about 25 minutes or until golden brown.
- Allow to cool completely before cutting into squares and dusting with powdered sugar.
