- 1/4 cup plain yogurt
- 1/2 tsp cardamom powder
- 3/4 cup water (adjust as needed)

Instructions
- Create the Batter: In a bowl, mix all-purpose flour and rice flour. Add yogurt and enough water to form a smooth, pourable batter.
- Ferment: Cover the bowl and let it sit in a warm place for 2-3 hours until bubbles form on top.
- Prepare Sugar Syrup: Combine sugar and water in a saucepan over medium heat; stir until dissolved. Add cardamom powder and simmer until slightly thickened.
- Heat Oil: Heat oil in a deep frying pan to around 350°F (180°C). Test by dropping in a small amount of batter—if it sizzles, it's ready.
- Pipe Jalebi Shapes: Use a piping bag or squeeze bottle to pipe swirling shapes into the hot oil. Fry until golden brown on both sides (about 1-2 minutes each).
- Coat in Syrup: Dip fried jalebis into warm sugar syrup briefly before placing them on paper towels to absorb excess syrup.
