- 4 boneless, skinless chicken breasts (1.5 lbs)
- 4 oz pancetta or bacon, diced
- 12 oz spaghetti or fettuccine
- 4 cloves fresh garlic, minced
- 2 large eggs
- 1 cup freshly grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Gather all ingredients and bring a large pot of salted water to a boil.
- Cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
- In a large skillet over medium heat, add olive oil and diced pancetta; cook until crispy (about 5 minutes).
- Add seasoned chicken breasts to the skillet and cook through (about 8-10 minutes).
- In a bowl, whisk together eggs and Parmesan cheese.
- Combine hot pasta with chicken and pancetta in the skillet off heat. Quickly pour egg mixture over pasta while tossing until creamy.
- Adjust consistency with reserved pasta water as needed.
