- 3–4 ripe bananas
- 4 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 teaspoons ground cinnamon
- 1 packet instant yeast
- 1/2 cup unsalted butter (melted)
- 1 large egg
- 8 oz cream cheese (softened)
- 1 teaspoon vanilla extract
- 2 cups powdered sugar
Instructions
- In a large bowl, mix warm water and instant yeast until bubbly. Add mashed bananas, sugars, melted butter, egg, and vanilla; combine.
- Gradually incorporate flour and salt to form a slightly sticky dough. Knead on a floured surface for about 5-7 minutes until smooth.
- Place the dough in an oiled bowl, cover with plastic wrap, and let rise in a warm spot for about 1 hour or until doubled in size.
- For the filling, mix brown sugar and cinnamon in a small bowl. Roll out risen dough into a rectangle, spread softened butter over it, then sprinkle with the sugar-cinnamon mixture. Roll tightly into a log and slice into even pieces.
- Preheat oven to 350°F (175°C). Arrange slices in a greased baking dish and bake for 25-30 minutes until golden brown.
- For frosting, beat cream cheese, powdered sugar, and vanilla extract until smooth. Spread on warm rolls.
