Instructions
- Heat oil in a large pan over medium heat. Sauté chopped onions until golden brown and fragrant.
- Add minced garlic and grated ginger; cook for about 1-2 minutes until softened.
- Stir in cumin, turmeric, coriander, and garam masala; toast for a minute to enhance flavors.
- Add sliced mushrooms; sauté until softened, stirring frequently.
- Pour in coconut milk and scrape up any browned bits from the pan. Simmer gently for about 10 minutes until thickened.
- Season with salt and pepper; garnish with fresh cilantro before serving.
