- 1 can (15 oz) chickpeas, rinsed and drained
- 1 cup diced fresh vegetables (cucumbers, bell peppers, carrots)
- 2 tablespoons Greek yogurt or mayonnaise
- 2 tablespoons chopped fresh herbs (parsley or cilantro)
- 4 whole wheat or spinach tortillas
Instructions
- In a large bowl, slightly mash the rinsed chickpeas with a fork.
- Add diced vegetables and Greek yogurt (or mayonnaise) to the mashed chickpeas; mix until well combined.
- Season with salt, pepper, and fresh herbs. For added zest, squeeze in lemon juice.
- Place about half a cup of the mixture on each tortilla and roll tightly.
- Slice the wraps diagonally and serve with extra veggies or your favorite dipping sauce.
