- 1 pound boneless, skinless chicken breasts
- 1 red bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 1 medium zucchini
- 1 medium red onion
- 3 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 2 tablespoons low-sodium soy sauce
- 2 tablespoons honey
Instructions
- Wash and cut veggies into bite-sized pieces; cube chicken into one-inch chunks.
- Whisk together olive oil, garlic powder, soy sauce, and honey until smooth.
- Marinate chicken in half of the marinade for at least 10 minutes.
- Assemble skewers by alternating chicken with bell peppers, zucchini slices, and red onion wedges.
- Preheat grill or grill pan over medium-high heat and lightly grease it.
- Grill skewers for about 10 minutes, turning occasionally until cooked through. Drizzle with remaining marinade before serving.
