- 4 cups hatch green chilies, chopped (about 8–10 chilies)
- 1 pound lean ground beef or turkey
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 cups sharp cheddar cheese, shredded
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 tsp ground cumin
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Wash and chop the hatch green chilies; remove seeds if less heat is desired.
- Heat olive oil in a large skillet over medium heat. Sauté the diced onion until golden brown, then add minced garlic until fragrant.
- Increase heat slightly and add ground beef (or turkey). Cook until browned and crumbly.
- Stir in canned tomatoes, cumin, salt, and pepper; mix well.
- Gently fold in the chopped hatch green chilies and let simmer for about 10 minutes.
- In a baking dish, layer half of the meat mixture and sprinkle with half of the cheese. Repeat layers.
- Bake uncovered for 25-30 minutes until bubbly and golden on top.
