  • 1 pound lean ground beef or turkey
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cups sharp cheddar cheese, shredded
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 tsp ground cumin
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash and chop the hatch green chilies; remove seeds if less heat is desired.
  3. Heat olive oil in a large skillet over medium heat. Sauté the diced onion until golden brown, then add minced garlic until fragrant.
  4. Increase heat slightly and add ground beef (or turkey). Cook until browned and crumbly.
  5. Stir in canned tomatoes, cumin, salt, and pepper; mix well.
  6. Gently fold in the chopped hatch green chilies and let simmer for about 10 minutes.
  7. In a baking dish, layer half of the meat mixture and sprinkle with half of the cheese. Repeat layers.
