- 1 small sugar pumpkin (about 2–3 lbs)
- 2 tbsp extra virgin olive oil
- 4 cloves garlic, minced
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the pumpkin in half and scoop out the seeds.
- Drizzle olive oil over each half; season generously with salt, pepper, cinnamon, and nutmeg.
- Place cut-side down on a parchment-lined baking sheet and roast for about 40 minutes until tender.
- Once cooled, scoop out the flesh into a blender or food processor, add garlic, and blend until smooth.
- Adjust seasoning as needed and serve warm.
