- 4 oz fresh goat cheese
- 4 cups mixed greens (arugula and spinach)
- 1 cup cherry tomatoes, halved
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- ¼ cup toasted walnuts or pecans
- 2 tbsp fresh basil or mint, chopped
Instructions
- Rinse mixed greens under cold water and spin dry.
- Halve cherry tomatoes and set aside.
- Crumble goat cheese over the greens generously.
- In a small bowl, whisk together olive oil and balsamic vinegar; season to taste.
- Drizzle dressing over the salad and gently toss until coated.
- Top with toasted nuts and chopped herbs before serving.
