- 1 lb ground beef (80/20)
- 1 can (15 oz) black beans, rinsed
- 8 oz tortilla chips
- 2 cups shredded cheddar and Monterey Jack cheese blend
- 1 cup sour cream (or Greek yogurt)
- 2 fresh jalapeños, sliced
- 1 cup guacamole
Instructions
- Cook ground beef in a large skillet over medium heat until browned, about 8 minutes.
- Stir in taco seasoning and a splash of water; cook for another 3 minutes until fragrant.
- Add rinsed black beans and heat through.
- Spread tortilla chips on a large baking sheet; top with beef mixture and shredded cheese.
- Bake in a preheated oven at 350°F (175°C) for about 10 minutes or until cheese melts.
- Remove from oven and add fresh jalapeños, dollops of sour cream, guacamole, and any additional toppings you desire.
