- 2 lbs boneless chicken thighs
- 3 cups fresh vegetables (carrots, potatoes, bell peppers)
- 2 cups low-sodium chicken broth
- 2 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 1 tsp dried oregano
Instructions
- Chop the vegetables into uniform, bite-sized pieces.
- Season the chicken thighs generously with garlic powder, smoked paprika, thyme, and oregano.
- In the crockpot, layer the chopped vegetables first and place the seasoned chicken on top. Pour chicken broth over everything.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir gently to combine flavors.
- Serve warm in bowls with crusty bread on the side.
