- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup freshly grated Parmesan cheese
- 1 cup fresh spinach or broccoli, chopped
- 2 tbsp olive oil
- 1 tsp dried thyme or rosemary
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken until golden brown, about 5-7 minutes per side. Remove from skillet.
- In the same skillet, sauté minced garlic and spinach or broccoli until fragrant and vibrant.
- Pour in heavy cream and chicken broth; scrape up any bits from the pan while bringing to a simmer.
- Stir in Parmesan cheese and herbs until melted and smooth.
- Return the chicken to the skillet, coating it in the sauce. Simmer for a few additional minutes to meld flavors.
