- 2 cups low-sodium beef broth
- 1 cup shredded cheddar cheese

- ½ tsp black pepper
- 1 tsp paprika
- 1 tsp Italian herbs
Instructions
- Prep Your Ingredients: Dice the potatoes into bite-sized cubes. Mince the garlic and chop the onion finely.
- Sauté Aromatics: In a large skillet over medium heat, add a splash of oil and sauté the onion until translucent, about 5 minutes.
- Brown the Beef: Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, about 6-8 minutes.
- Add Potatoes and Seasonings: Stir in the diced potatoes, garlic, salt, pepper, paprika, and Italian herbs.
- Pour in Broth: Add the beef broth until it covers most of the mixture. Bring to a gentle simmer; cover and cook for 25-30 minutes until potatoes are tender.
- Add Cheese Topping: Sprinkle shredded cheese on top; cover again just until melted—about 5 minutes—and serve hot.
