Instructions
- In a large mixing bowl, combine the rolled oats, nut butter, honey or maple syrup, vanilla extract, and chia seeds. Mix until well blended.
- Gently fold in the dark chocolate chips until evenly distributed.
- Use a cookie scoop or spoon to portion the mixture onto a lined baking sheet.
- Chill in the refrigerator for about 30 minutes to firm up.
- Enjoy immediately or store in an airtight container in the fridge for up to one week.
