- 1 lb ground turkey
- 1 cup brown rice
- 1 medium onion, chopped
- 1 cup bell peppers (mixed colors), chopped
- 3 cloves garlic, minced
- 2 tsp cumin
- 1 tsp paprika
- 1 tsp salt (adjust to taste)
- 2 cups low-sodium chicken broth
- 2 tsp olive oil
Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onion and bell peppers; sauté until softened (about 5 minutes).
- Push veggies aside; add ground turkey to the skillet. Cook until browned (7-10 minutes), stirring occasionally.
- Stir in minced garlic, cumin, paprika, salt, and pepper; cook for another minute until fragrant.
- Add brown rice and chicken broth; bring to a boil. Reduce heat to low, cover tightly, and simmer for about 45 minutes or until rice is tender.
- Fluff with a fork before serving. Adjust seasoning if necessary.
