- 8 oz short pasta (like rotini or penne)
- 1 cup cherry tomatoes, halved
- 1 cup cucumbers, diced
- 1/2 cup crumbled feta cheese
- 1/4 cup extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1/4 cup fresh basil and parsley, chopped
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
- While the pasta cooks, chop the cherry tomatoes and cucumbers into bite-sized pieces.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- In a large bowl, combine cooled pasta with chopped vegetables.
- Add crumbled feta cheese and fresh herbs to the mixture.
- Pour the dressing over everything and toss gently until combined.
- Cover and chill in the refrigerator for at least 30 minutes before serving.
