- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 ripe avocado, cubed
- ½ cup crumbled feta cheese
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Wash and dry all vegetables thoroughly.
- Dice the cucumber and halve the cherry tomatoes.
- In a large mixing bowl, combine mixed greens with cucumber and cherry tomatoes; gently toss.
- Add cubed avocado and crumbled feta cheese to the bowl.
- Drizzle olive oil and balsamic vinegar over the top; season generously with salt and pepper.
- Toss everything together until well combined. Serve immediately.
