Ingredients
- 1 lb lean ground beef
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup bell pepper, diced (red or yellow)
- 1 can (14.5 oz) diced tomatoes with herbs
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- Fresh parsley or cilantro for garnish
Instructions
- Heat 1 tbsp olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent.
- Stir in minced garlic and cook briefly until fragrant.
- Add ground beef, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Mix in the bell pepper and cook for another 3-4 minutes until slightly tender.
- Pour in the canned tomatoes along with cumin, paprika, salt, and pepper. Stir well and let simmer for about 10 minutes until thickened.
- If desired, sprinkle shredded cheese on top and cover until melted.
