- 2 cans (14.5 oz each) diced tomatoes with green chilies
- 1 can (15 oz) kidney beans, rinsed
- 1 cup bell peppers, chopped (mixed colors)
- 1 medium onion, chopped
- 2 tsp chili powder
- 1 tsp cumin
- 3 cloves garlic, minced
- 2 cups low-sodium beef broth
- Sour cream for topping (optional)
Instructions
- Prep ingredients: Chop bell peppers, onion, and garlic.
- Sauté aromatics: In a skillet over medium heat, cook onions and garlic in oil until golden.
- Combine: In the crockpot, mix sautéed onions with ground beef (browned), tomatoes, kidney beans, bell peppers, broth, chili powder, cumin, salt, and pepper.
- Cook: Set on low for 6-8 hours or high for 3-4 hours.
- Taste test: Adjust seasoning before serving.
- Serve hot with a dollop of sour cream on top.
