- 1 medium butternut squash (about 2 lbs), peeled and diced
- 1 medium red onion, diced
- 4 garlic cloves, minced
- 3 tbsp olive oil
- 8 fresh sage leaves, chopped
- 2 tbsp pure maple syrup
- 1/2 tsp ground cinnamon
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet over medium heat, add olive oil, diced red onion, and minced garlic. Sauté until translucent (about 5 minutes).
- Add diced butternut squash, chopped sage leaves, cinnamon, salt, and pepper. Stir to coat evenly.
- Spread the mixture on a parchment-lined baking sheet and roast for 25-30 minutes until tender and caramelized.
- Drizzle with maple syrup while hot before serving on a platter garnished with extra sage.
