- 4 boneless, skinless chicken breasts (about 1 lb)
- 3 cloves fresh garlic, minced
- 1 medium onion, diced
- 2 cups mixed vegetables (fresh or frozen)
- 1 can (10.5 oz) cream of chicken soup
- 1 cup shredded sharp cheddar cheese
- 1 cup plain or seasoned breadcrumbs
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C) and grease a large baking dish.
- In a skillet over medium heat, add olive oil and sauté diced onions and minced garlic until translucent.
- Cut chicken into bite-sized pieces and add it to the skillet along with mixed vegetables; cook until chicken is no longer pink.
- In a bowl, combine the cooked chicken mixture with cream of chicken soup; season with salt and pepper.
- Pour the mixture into the greased baking dish, sprinkle cheese on top, then add breadcrumbs.
- Bake for 25-30 minutes until cheese is bubbly and breadcrumbs are golden.
