Instructions
- Prepare your vegetables by chopping them into bite-sized pieces.
- In a mixing bowl, combine besan, spices, and salt. Gradually add water while whisking until you achieve a smooth batter.
- Fold in the chopped vegetables gently until well-coated.
- Heat oil in a deep frying pan over medium heat; test readiness with a small amount of batter—it should sizzle.
- Carefully drop tablespoon-sized portions of the batter-coated vegetables into hot oil and fry until golden brown (about 3-4 minutes per side).
- Drain on paper towels and serve hot with chutney or ketchup.
